Winter Food

The weather is officially blech today, so I started thinking about fixing some ‘winter food’ for dinner this week…things I haven’t made since last winter.

First up this week: Chicken & Wild Rice Chowder

2 C. sliced carrots

½ C. chopped onion

½ C. chopped celery

2 T. butter

3 T. all-purpose flour

2 cans (14 ½ oz. each) chicken broth

2 2/3 C. cubed cooked chicken breast

1 pkg.  long grain and wild rice (I use Uncle Ben’s)

¼ C. half and half (can use fat-free)

1/8 t. pepper

Prepare the rice according to package directions.

In a large saucepan, sauté the carrots, onion, and celery in butter until tender. Stir in flour until blended; gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the cooked chicken, rice, half and half, and pepper; heat through.

Yield: 4 servings

I’ve been known to bake fresh bread, but this week I’ll be serving it with biscuits. I got a bag of those Pillsbury Grands in the freezer section…that way I don’t have to make an entire container of them.

grumble.

In direct contradiction to the title of this blog, my life is NOT laid back right now. At all. It’s making me quite crabby, actually.

I’m trying to laid back-ify things in general, but there are those days (or, in this case, weeks) when things just don’t go according to plan. So I’ll try to roll with it and it’ll all be fine.

me: I think I’m going to have some ice cream.

him: OK.

me: My new rule is that I only have ice cream on days I go for a run, but I have my period, so I’m going to have some anyway.

him: That was my excuse for having coffee with dinner.

me: You have your period?

him: No, you have yours.

Oh, he’s a funny, funny man.

Herding Cats

Between going to visit the boyfriend (hm…what to call him in BlogLand?) and school starting, it’s been a busy end of the summer. Although, I have to say, summer isn’t over until I break out the running tights. Which I may do sooner rather than later since I experienced a bit of chafing this evening on my run. What? That was way more than you wanted to know? Sorry about that.

The cat is (hopefully) getting a new little brother. Someone I work with has a stray kitty she needs to find a home for…and I think that home may be with me. Pending a clean bill of health, of course. I’m more than happy to fork over the dollars to get him fixed and all, but if it turns out he has feline leukemia, he’s going to need to go somewhere else. Fingers crossed!

And speaking of cats, dealing with Kindergarteners at the beginning of the year is like herding them. Cats. Sheesh. At least my older kids are still young enough to enjoy being in school. It’s a good thing the new Ks are so cute, because they just don’t know how to be in school yet, and that makes for a somewhat trying time for everyone. These poor little people are just trying to figure it all out. Well, most of them.
